Course Description

This course reviews current research on the relationship between genetics, chronic disease, and the role of medical nutritional therapy. The class also explores nutrition and the aging process with an emphasis on the interactions of physiological stages and lifestyle choices.

Rationale

It is nutrition’s important role in the treatment and prevention of chronic diseases that makes this class an essential component of the MPH program. While students may enter the class with an awareness of the detriments associated with various chronic diseases, it is through the material covered in this class that they will learn the treatment aspects and the application of nutritional therapy for chronic diseases.

Measurable Learning Outcomes

Upon successful completion of this course, the student will be able to:

  1. Justify why all ages are part of the continuum of opportunities for the prevention and control of the chronic disease.
  2. Differentiate between the leading chronic diseases, their risk factors, and recommended diets.
  3. Examine the relationship obesity, diet, excess weight gain, and physical activity have on chronic disease.
  4. Examine food consumption patterns and trends as they pertain to chronic disease development.
  5. Compare the risk factors of chronic diseases with the Word of God.

Course Assignment

After reading the Syllabus and Student Expectations, the student will complete the related checklist found in the Course Overview.

The student will complete three Discussions. Each discussion will consist of a thread and at least two replies. The instructor is looking for substantial, thoughtful, and critical discussions.

The student will assume the role of a nutrition care provider to assess and evaluate two case studies related to various chronic diseases. After doing the assigned reading, the student will fully answer all case study questions and submit his/her responses. All assignments must be completed in the current AMA format.

This project includes three parts: 1) Selection of Site 2) Completion of Hours and 3) Reflection Discussion. This is an experiential learning assignment, where the student is required to develop and implement an interprofessional experience project. The student will engage in a project that includes interprofessional collaboration and a minimum of 8 hours of service within the community. The student will also complete a discussion reflecting on the experience with peers.

This assignment must be completed in the current AMA format.

The student will take three quizzes throughout the term, worth 100 points each. Quizzes will cover the readings for the week and will be formatted in true/false, multiple choice, short answer, and essay style.
