Evaluation and application of current research that supports nutrition recommendations that result in optimal health for young children and adolescents. Explores determinants of nutritional status and strategies for prevention of prevalent nutritional concerns.

Rationale
It is nutrition’s important role throughout the life-cycle that makes this class an essential component for the Masters in Science program. While students may enter the class with an awareness of the general importance of nutrition through the life cycle, it is through the material covered in this class that, they will learn about preconception nutrition, specific deficiency risks, factors influencing food intake, strategies to overcome poor nutrition intake and how to assess growth. Students will reflect on how to view this topic through the lens of God’s Word.

- Describe the risks of poor nutrition from infancy to adolescents.
- Explain strategies to overcome reduced nutrient intake in infancy to adolescents.
- Examine the influences of social, environmental, and psychological factors on food intake.
- Determine the most accurate and effective methods for assessing growth and dietary intake in children and adolescents.
- Investigate the impact of preconception nutrition on fetal health.
- Compare the challenges of adequate nutrition in children with the Word of God.
